Strawberry enzyme 草莓酵素


材料:

1)草莓 - 1kg
2)柠檬- 1 粒
3)蜜糖 - 1/4罐


作法:

1)将草莓和柠檬洗干净后,晾干。草莓切半,备用。

2)将柠檬去皮后切片。

3)把准备好的材料分成3份。顺序将草莓和柠檬一层段的方式堆叠放入玻璃瓶内,淋上蜜糖。其余两份材料都是如此处理。

4)盖好瓶盖。存放阴凉处约二至三个星期后即可饮用。

5)饮用时,取30ml稀释10倍水即可。酵素渣也可一起食用。


Tomato Enzyme 番茄酵素

上个周末去了一趟金马仑,在那儿买了一公斤的樱桃番茄回来。本来是打算当沙拉吃,但是,一公斤那么多,吃到何时,唯有听老公的建议拿来做酵素。这次的番茄酵素和之前的有不同,我用了蜜糖而不是冰糖。


材料:

1)樱桃番茄 - 1kg
2)柠檬- 1 粒
3)蜜糖 - 1/4罐

1)将番茄洗干净后,晾干。然后,切一半备用。

DIY Pineapples Enzyme 黄梨酵素

DIY Step-by-step

Container: Glass container

Ingredients:

1) Pineapples 2 pcs
2) Lemon 3 pcs
3) Rock sugar ~ 300 grams


Step 1: Hygiene is the most important step in enzyme DIY. All tools such as glass container, cutting board, scissor and knife should be thoroughly cleaned and dried underneath the sunlight. All fruits should be properly rinsed and dried.

Step 2: Pineapples skin needs to be removed and to be sliced into pieces.

Step 3: Lemon need to be sliced into small pieces.

Step 4: Stack a layer of pineapples into the bottom of the container, follow by a layer of lemon & rock sugar. Continue with the remaining.

Please Note: the top layer needs to be completed with rock sugar. The container can ONLY be filled up to 80% of its capacity. Anything more than 80% is not recommended.


Step 5: Close tight (but not too tight in order for the gases to escape).


Step 6: Keep the container in dry cool place for 1 month before serve.

Step 7: Mix 30ml with 10 times of water for serve.

Effect:

Pineapple has been used to alleviate degree of inflammation and to speed up tissue repairs. Its enzyme helping indigestion.

酵素必成10个秘诀

酵素必成10个秘诀

  1. 好心情、爱心和耐心。做出酵素能量也高。
  2. 选购外型完美的新鲜蔬果,避免选外皮受损的水果。
  3. 为避免水果沾农药,可以在洗干净风干后去皮,选用有机蔬果更合适。
  4. 确保所有容器洗干净后,务必晒干或风干。
  5. 酿制时刀具、沾板、双手保持干净,不能碰到水、油,免得发霉。
  6. 材料只放8分满,确保发酵过程酵素不会溢出。
  7. 在堆叠各酵素材料,最后一层材料须放置柠檬和糖,以达到杀菌的效果。
  8. 瓶口以保鲜纸密封后(或先盖上塑胶纸)才上盖。如用旋转式的瓶子,则不需使用保鲜纸。
  9. 若发现糖分不足,可在两星期内酵素尚在发酵活跃时加入糖。
  10. 要放置越久的酵素,应放更多糖份,以免酵素变质发臭。

Apple Carrot Enzyme

DIY Step-by-step

Container: Glass container

Ingredients:

1) Green apple x 4 pcs
2) Red apple x 4 pcs
3) Carrot x 2 pcs
4) Lemon x 2 pcs
5) Rock sugar ~ 300 grams

Step 1: Hygiene is the most important step in enzyme DIY.  All tools such as glass container, cutting board, scissor and knife should be throughly cleaned and dried underneath the sunlight. All fruits should be properly rinsed and dried. 

Step 2: Green apples Red apples skin needs to be removed and to be sliced into pieces.

Step 3: Lemon and carrot need to be sliced into small pieces.

Step 4: Arrange the first layer with red apple, follow-by 2nd layer with green apple, etc. Please see below illustrations to get some idea how it looks like:-
Layer 1 : some red apple slices
Layer 2: some green apple slices
Layer 3: Lemon
Layer 4: rock sugar
Layer 5: repeat with red apple again
Layer 6: repeat with green apple and it goes on until all the fruits slices been stuffed into the container.

My First Garbage Enzyme

Just came back from Cameron Highland with lots of vegetables and fruits for my enzymes projects. The left over from the fruits and vege, I've decided to make my very first Garbage Enzyme. Early Monday morning, after breakfast with hubby, we went to Tesco and bought the following container. It cost me, RM24++ to get this air tight plastic container. According to the label, it can takes up to 21 litres max.

Okay, I've got 3kg vegetable dregs now. According to the formula, for every 10 parts of water, we need 1 part of sugar and 3 parts of kitchen waste. Therefore for me with 3 kg of kitchen waste, I need to have 1kg sugar and stir it in 10 litres water.

This is how it looks like after I've stuffed in all the kitchen waste. Look nice isn't it? Check out my following photo - top view :)

How does this look to you? Kinda mixed vege or chap choi in cantonese, isn't it? Yummy or not?

Finally, the container needs to be closed tight and keep it away from direct sunshire - preferably dark area for 3 months. During first month, we need to open the container daily to let go the gases. After first month, occasionally we still need to open the container to release gases.
